At the Gannet, we have always been passionate about crafting exceptional dining experiences. Our journey took an exciting turn when we met Hendrick, the visionary behind the Glasgow Mushroom Company. Since that encounter, we have been captivated by the intricate world of mushroom cultivation and the thrilling possibilities it presents for our kitchen.


Foraging for wild mushrooms is a past time we embrace when the season permits. There is something magical about wandering through nature, seeking the delicious and varied wild mushroom varieties hiding in many corners of the country. However as any avid forager knows, the trade secret is that we don't readily reveal our prized spots ! Amidst the hustle and bustle of restaurant life and family commitments, finding time for regular foraging trips can be quite the challenge.


To elevate our relationship with mushrooms even further, we are thrilled to share Hendrick has teamed up with master craftsman Paul Hughes to create a custom mushroom chamber right here at The Gannet. This endeavour allows us to cultivate a diverse array of mushrooms, offering unique flavours and textures that truly enhance our culinary offerings. By harvesting these fantastic fungi daily, we guarantee that our dishes celebrate the freshest and most vibrant ingredients available.
